Harold's Citrusy Chick-Pea'd Beets- another easy and healthy recipe from my dad's garden!

BEETHULU is no more! Dad cooked up the lovecraftian beets, and they were sooooo yummy!

Sorry for the wait, here's another of Dad's weird but delicious recipes, straight from the garden!

But first.... Look how it turned out!

Harold's Citrusy Chick-Pea'd Beets

1) First we harvested all our beets. If you want to do this recipe the right way, I recommend putting your beets in a bowl with the roots facing out so it resembles a many-tentacled, indescribable cosmic horror from the deep unknown... Like so:

2) Then we washed them, peeled them, and trimmed them. They looked a lot less scary once we chopped them into little ruby jewels and started pan frying them in splash of orange juice and olive oil.

3) In addition to the splash of orange juice (we probably used a quarter of a cup) dad peeled and chopped up 3 or 4 mandarin oranges and threw them in:

4) Dad set this to cook on medium heat, with a lid on it. While it was cooking, we went outside to pick fresh herbs. He used I wanna say 4 or five of the largest sprigs of fresh thyme.

5) When the beets are soft and tender, the cooking is just about done! At that point dad added the sprigs of thyme and stirred them in. Then he added a can of chickpea Garbanzo beans. He said it would've tasted better if we had used dried chickpeas and cooked them up- but that he was feeling lazy so he went with the time saver. Take a look:

6) We let the whole thing simmer until the chickpeas soaked up the heat and the beautiful purple pigment of the beets! Then dad plated these on slices of cheese. I chose mild cheddar but he chose mozzarella... He let me try both and his was better.

Even my little snot of a brother liked the food! I tried not to let myself think about how he had turned his nose up when I tried making dad's Leafy Carrots recipe... I guess I'm just glad he gave the garden a taste!

Give this recipe a shot! It sounds weird to put beets, oranges, chickpeas, and thyme together but it is unbelievably good! If you only ever trust me about one thing, then this should be the one thing!
